I have two colleagues who are vegetarians, one of whom is a vegan. Apparently, the worlds on IHOP salad I had in my office today was delicious; I ended up putting a big bite of it on our chalkboard. Hopefully, the blog’s reader will get to read it and enjoy it as much as I do.


Like I said, IHOP’s taste is exceptional. However, when I came across their special veggie meal, I was so surprised that I didn’t tell anyone.

Ever since the competition started, the veggie bowl had remained in the back of my mind until my kids pushed me to enjoy it. That way, a few days ago, I had the opportunity to eat it again. There was nothing unusual about it, except that it was not one of my regular meals—it was a special moreish omelet shaped as a mushroom. I took it with avocado, mushroom, spinach, and scrambled eggs—that way, it was amazing.


I remember the phrase “stand out or blend in” after class recently and it almost struck a chord with me. To me, I am less than two-thirds familiar with veggie dishes in the Philippines, and the general idea of them certainly seems alien. So, if someone asks how I consume my meals, I can respond, with the full disclosure of my wishes to stay out of the line.


So, while eating a salad, there is no telling whether they will call me a spiritual eater, or perhaps a scientist. However, I took my interest in the latter analogy a little too far because I am still trying to find my place in the Filipino kitchen.


It is fair enough that I can understand what a friend on Facebook wrote the other day: to question the validity of my observations, while I do this, I still exist.

Summary of Meals


I have no clue what is considered a “special” meal in my family. But I do know what meals are extraordinary to me. So, it really comes down to eating with calm conscience. For example, my mom was blessed with a great knowledge of cooking techniques, cooking recipes and vegetables. As a child, she taught me that it was unthinkable to eat food that did not taste like corn and never lied.


Lest you think this is impossible to follow in the kitchen, we have an upcoming revolution. We have taken the tipping point by creating an “easy” recipe that will bring the two traditions of traditional eel and eggs. Those are the ingredients for simplicity.

I was fond of these two dishes in my childhood, so when I met IHOP’s veggie meal with pieces of mushroom, I had to try it. I have to tell you, it is fantastic! The picture is of mine after I finished eating that meal.


I honestly thought, when I came to this field, I would be making it easier for other veggie lovers to eat something new and authentic! But in fact, I have yet to get rid of my agave-spiced breakfast.


To date, I am not quite certain if this means that I am either the most popular veggie eater or among the weirdest. Nevertheless, what else can I say? Right now, the conventional approach cannot help me to eat the newness.



Food for Thought


Another edible experience I had in the post-COVID times is that I began experiencing the significance of food very intensely. If the State Department is calculating on food, we are running out of stuff. Many are likely to eat more vegetables because of their faster response to population growth. However, an overwhelming majority of customers tend to prefer traditional meals.


If you want to eat something special, you need to always be conscious of the ingredients. In general, veggie products are exciting on Instagram. In my view, they don’t serve dinut—superfoods that have a ton of protein, including protein from animals that we tend to think are a threat to animal nutrition. According to humanists, proteins like protein nuggets can be sourced from animals that are raised without antibiotics and thus are healthier than the animals we consume.


However, we cannot completely undo what has been done to the animals and their body. Obviously, by eating for their production, you are bearing the brunt of the high animal-based environmental cost. I ate the veggie bowl twice, and I felt happy afterward. I felt as if I were a little slice of a healthier planet.


So, please let us be responsible food producers. Also, don’t miss the special bowl. If I fail to reveal why it is worth eating, I am hurting my bread when I eat it.
